The majority of closets in the industry utilize a product called melamine. Melamine is made from a hard resin coating compressed over manufactured wood. It cleans up easy and is very durable.
While white is the most commonly chosen option for closets, melamine is available in a wide array of colors and textures.
The other two materials that are sometimes used is HPL (high pressure laminate) which has a coating similar to melamine but is bonded to plywood. The other material that is sometimes used is a pre-finished plywood.
